Much to my family’s delight, I’m on a cooking kick lately.  In the good company of my sister and her two boston terriers, Coleman and Cricket, I’ll be baking a batch of these homemade barbecue meatballs to take to our family reunion this weekend.  In the past, I’ve always baked them alongside of mashed potatoes and baked macaroni and cheese. 

Barbecue Meatballs

Ingredients for Meatballs
1 lb ground beef
1 c. bread crumbs
1/2 c. milk
(The recipe doesn’t call for it, but I add the following ingredients to them for extra flavor):
A few tablespoons minced onion
2 tablespoons worcestershire sauce
A few dashes of garlic powder

Ingredients for Sauce
1 tsp salt
1 tsp black pepper
1 c. diced onion
1 c. chopped green pepper
1 c. ketchup
1 1/2 tsp. sugar

Instructions
1. Pre-heat oven to 350 degrees
2. Mix ingredients for meatballs
3. Roll meatball mixture into balls and place on a greased baking dish
4. Mix ingredients for sauce and pour it over the meatballs
5. Bake at 350 degrees for 45 minutes

This barbecue sauce is bold (but not too bold) and tangy– it blends SO well with the flavors from the meatballs. 

FREEZER-FRIENDLY INSTRUCTIONS: You can pre-make the meatballs, flash-freeze them (raw), dump them into a gallon freezer bag, place them back in the freezer to continue freezing all the way and store them away for a rainy day.  When you are ready to bake them, just pull them out of the freezer, place the frozen meatballs on a greased pan, whip up your sauce ingredients last minute, pour it over your meatballs and bake.  Cut one in half at the end of your cooking time and make sure they are cooked through (no pink left inside).
